Lamb' s Quarters (Chenopodium album) is a non-native annual, also known as pigweed. Growing up to six feet tall, it can be identified by its stems which have red streaks, and by its leaves, which are either triangular or diamond-shaped. A close relative of spinach, this plant is also good to eat. The young shoots may be cooked and eaten like asparagus. It is rich in vitamins A and C, as well as calcium. Maybe we should eat it to extinction in areas where it is not native.
